Mexican Hot Chocolate Cookies

These are the best cookies ever! They taste just like Mexican hot chocolate with a bit of heat from the Cayenne pepper. If you have ever made Abuelita hot chocolate, these taste just like that but in a cookie. If you have no clue what I am talking about these cookies are the perfect blend of chocolate and cinnamon. They are crisp on the outside and ooey gooey on the inside. YUM!

I am going to list the ingredients in order and this is how you will add them to your mixer or bowl. Making sure each ingredient is thoroughly mixed before adding the next.

Preheat Oven to 400 Degrees

1 Cup of softened butter

1 3/4 cup of granulated sugar

1/2 cup unsweetened cocoa powder

1 tbls ground cinnamon

1/4 tsp cayenne pepper

2 tsp Vanilla extract

1/2 tsp salt

1 tsp baking soda

2 tsp cream of tarter

2 large eggs

2 1/2 cups all purpose flour

1 cup semi sweet chocolate chips or milk chocolate chips

after all ingredients are combined you will drop cookie dough by spoonful onto an ungreased baking sheet.I used parchment paper so my cookies wouldn’t stick because of the cinnamon and sugar mixture. Plus easy clean up afterwards!  I roll them into balls and the flatten them a bit. You will then sprinkle them with cinnamon and sugar mixture. I used already mixed store bought Cinnamon and sugar I bought at Costco.

You can also just use 1/2 cups sugar to a teaspoon of cinnamon.These will bake in the oven for 10-12 minutes. They will look kind of crackled on the outside and a little gooey in the inside. As they cool they firm up though. I packed them up as gifts for Christmas for our Post man, neighbors, friends, and family. They were a huge hit!
