Moist & Delicious Zucchini Bread

I’ve never made Zucchini bread before and was hesitant to even try it. This recipe is delicious and super moist though. It reminds me of a carrot cake in a way. The texture is that of banana bread with the spice of carrot cake. I am in love with this recipe.Once baked, you can not see or taste the zucchini at all in this recipe.

Preheat oven to 350 degrees

  • 3 cups peeled and grated zucchini
  • 1 cup vegetable or canola oil
  • 2 1/2 cups sugar
  • 5 teaspoons vanilla extract
  • 4 teaspoons ground cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 large eggs
  • 1/2 tsp salt
  • 3 cups all-purpose flour
  • 1/2 cup chopped pecans ( optional)

You will combine all ingredients with the exception of the flour. Once combined you will add flour one cup at a time and stir until all ingredients are well combined. You will then pour into two pre-greased bread pans. You will bake at 350 degrees for 50-60 minutes until a toothpick inserted in the center comes out clean.
