This is my absolute favorite Banana Bread recipe! It is moist and delicious! It’s great alone or with a pat of butter.
I also sometimes add chocolate chips to it. This recipe is also great as muffins.
Preheat oven to 350 degrees
- 1 2/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup plus 2 tablespoons sugar
- 2 eggs
- 1/2 cup oil
- 4 bananas, very ripe, mashed
- 2 tablespoons sour cream
- 2 teaspoons vanilla extract
- 2/3 cup chocolate chips (optional).
I add bananas first and mix them up in my kitchen aid until they are soft and mushy. I then add all ingredients except the flour and beat on low for a minute or two. I then add the flour slowly. You will then pour into a pre-greased bread pan and bake for one hour or until a toothpick inserted comes out clean.
If you are making muffins then fill muffin tins 2/3 the way and bake for 18-20 minutes or until a toothpick inserted comes out clean
