Super Easy Chicken Pozole
Ingredients:
1 whole rotisserie chicken pre-cooked( I buy mine at the grocery store in the deli). Shred up chicken.
1 whole small onion diced
1tbs. vegetable oil
1 14 ounce can white hominy drained and rinsed
1 28 ounce can Red Enchilada sauce ( I used Las Palmas mild)
6 cups chicken broth
Garnishes: cilantro, avocado, cotija cheese, radishes, and limes ( whatever you prefer)
Cooking Instructions:
Heat oil in a large pot on medium heat ( stock pot, Caldero, etc.) add onions and saute.
Add shredded chicken, salt, and pepper to taste.
add hominy, enchilada sauce, and chicken stock and stir.
let this come to a boil and lower heat down to med-low and let simmer 20 minutes. Serve soup hot and squeeze lime juice into your bowl, add garnishes and enjoy.
I also use leftover turkey after Thanksgiving in place of the chicken. It’s delicious.
